Kimmo Virtaneva checks the consistency of his mozzarella cheese. Kimmo began making cheese as a way to use up the extra milk that their cow, Molly, produced. He started with mozzarella because it is relatively easy to make and then moved on to more difficult cheeses. His homemade cheddar won first prize at the Ravalli County Fair this year. "Monica has a good nose for cheese because it's so big," Kimmo teases, "really, she was a great help in creating the prize-winning cheddar."
